Store toxic chemicals in a separate designated area away from food or equipment in order to prevent possible contamination. PIC discarded the chemical. R/HOT HOLDING: Observed chili hot holding in the cook line steam table at 129°F. Potentially hazardous foods (PHFs) shall be hot holding at 135°F or above in order to limit bacterial growth. PIC stated that the water level in the steam table was low, added water, and increased the temperature. R/DATEMARKING: Observed solo cups of grilled onions lacking a date mark in the refrigerated drawer. Ready-to-eat, PHFs shall be dated the day of opening or preparation and used or discarded within 7 days. PIC discarded the grilled onions. PROTECTION FROM CONTAMINATION: Observed a can of Chili Beans with a dented bottom seam. Do not use dented canned goods in order to prevent possible contamination. |
