06/28/2012Inspection7G--Commercially precooked wings found partially cooked, measuring 55 degrees using the inspector's calibrated FTT in a bin on the flat top cook surface. Manager stated that wings were partially cooked ~15 minutes prior to us temping them. It was allowed for the wings to be cooked fully to 140 degrees and to be held at >=140 degrees until served. Manager cooked wings up to >140 degrees and placed back into hot holding bin. Corrected. 8A--Pop and oil bins found stored directly on ground underneath counter. 8F--A bag of frozen meatballs found sitting in sink without running water. Manager moved bag of meatballs to the cooler to continue thawing. Corrected. 10B--Shelving lined with cardboard is not smooth and easily cleanable. 11A--When asked, manager stated that they wash and rinse dishes only and there is no sanitizing step involved. Explained that he must wash, rinse, then sanitize @ 50 ppm cl, then air dry. 11D--Food debris found on bottom shelf of freezer. 15B--Ventilation hoods had grease and dust build-up.
