One of the employees was wearing many rings while working with foods. No jewelry other than a plain wedding band may be worn, this includes not wearing braclets. Correct today.

In the kitchen, raw meats were stored above ready to eat foods. Proper storage is raw meats on the lowest area with chicken stored below other meats. All ready to eat foods must be above all raw foods.

In the front area, knives were stored between the sandwich unit and the wall and between rhe hot holding unit and the equipment piece next to it. These areas are not cleanable and theerefore the knives can become contaminated. Store the knives in a washable area.

The sandwich unit in the customer area was not holding foods at 41'F or less. A black pepper mayonaise mixture was 46'F and was discarded. Raw chicken was 42'F and other similar foods were removed to a refrigerator holding food at 39'F. Potentially hazardous foods must be kept at a cold temperature of 41'F or less. The deli items were placed in a pan of ice for this days lunch only.

Therre is an upright home style freezer in the basement. This may be used only for pre-frozen, pre-wrapped foods.
