--Deli, tuna pasta, & some cut vegetables, foods found held at 45 °F, in 2 prep refrigerators, rather than 41°F or below as required, COS, placed all items in metal pans, brought temperature down to 41 during the inspection. (Note bottom inside unit food was 37F, only top plastic binned foods were elevated in temperature. Will continue to monitor temperatures.)
- Accuracy of Temperature Measuring Devices for Food (46.561)
--Food thermometer, located in front grill area, is not scaled to measure to +/- 2°F. COS
- Equipment Openings, Closures & Deflectors (46.582)
--Found ice build-up below drain line from condenser located in one Traulsen freezer in grill kitchen. 5 days to correct.
- Equipment in Good Repair & Proper Adjustment (46.671)
--Interior surface of one prep refrigerator right door equipment - is cracked and insulation is showing. 10 days to correct.
- Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
--Observed the following equipment, in kitchen area, with an accumulation of dust, dirt, food residue, debris on non-food contact surfaces, under Kenmore counter top refrigerator and inside cabinet below it, walk-in cooler fan guards and motor, some work table draws and frame, top of 2 ice cream chest doors/inside chest, & all kitchen doors. 5 days to correct all.
- Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
--Floor under sodas in boxes, under one work table near salad bar, walk-in cooler floor near mobile cart wheels and including wheels on carts, are areas of the food facility is extremely dirty, dusty, and in need of cleaning. 5 days to correct.
