Observed fried, baked, and rotisserie chicken being held in hot holding units with inernal temperatures of 110 degrees F, 126 degrees F, and 129 degrees F. Approximately 11 pounds of chicken disposed valued at approximately $47 dollars.

Observed deli packaged soups, submarine sandwiches, deli meat wraps, deli meats, store prepared salads being stored in refrigerated customer self service case with an ambient air temperature of 53 degrees F. Using a calibrated thermometer internal temperatures taken ranged from 46 to 48 degrees F. All products disposed. Approximately 34 pounds of food disposed valued at $165 dollars.

Observed single use disposable aluminum foil style pans stored dirty full of old food debris inside the bakery closet for re-use. Single use items may not be re-used.

No sign or poster posted at the handwash sink in the deli area to remind food employees to wash their hands.
