- Multiple food items observed improperly cooled down--please provide for all potentially hazardous foods to be properly cooled down from 135 degrees fareneheit to 70 degrees farenheit within 2 hrs., and from 70 degrees farenheit to 41 degrees fareneheit within 4 hrs. Recommends to rapidly cool down foods by using one of the following methods: (i). ice as an ingredient (ii). ice bath; with ocassionally stirring (iii). ice wand (iv). separating into smaller portions (v). other effective methods.
- Please provide for employees to wash hands as task or duty changes for a min. of 20 seconds. In addition, please provide for all food handlers to properly wash hands as they are contaminated; rather than wipe on apron.
- Please provide for all food items to be honestly presented for human consumption. (a). Please remove heavily dented canned goods from shelving for return credit. (b). Please provide for ham to be discarded---discoloration is present.
- Please provide for all food handlers to properly handle ready to eat foods,by using gloves provided. No hand sanitizer present--Manager observed cutting jalepenos with bare hands; without following proper procedures. If establishment wishes to allow bare hand contact--documentation must be provided.
- Please provide for raw and cooked foods to be properly separated to prevent contamination. Observed raw pork stored along side various ready to eat foods;such as deli meats.
- Please provide proper date labels on all deli meats with the original date label found on product packaging, or by other approved alternative method.
- Please provide for all toxic chemicals to be properly labeled with common name, and properly stored to prevent contamination of food, equipment, utensils, linens, and single-service and single-use articles by separating the poisonous or toxic materials by spacing or partitioning.
- Please provide for all food contact and non-food contact surfaces to be maintained clean and sanitary. (a). shelving (b). can opener (c). Provide for ice scoop to be stored on a clean and sanitary surface, as well as interior of ice machine to be cleaned in sanitized--2nd ice machine located from kitchen. (d). Please provide for all worn utensils or equipment that contain breaks, open seams, cracks, chips, inclusions, pits, and similar imperfections to be discarded to prevent physical hazards, and to easily allow proper cleaning of equipment and utensils; such as: large trash bucket used to store popcorn kernals, in-use utensils stored unclean in refrigeration unit, and cutting boards that have depressions. (e). Please provide for light sheild in beer walk-in cooler to be cleaned and sanitized--mildew present.
