  • Must remove lids while using shallow pans to rapidly cool down chili, in order for temperature to reach 70 degrees F within two hours. Also, use the large walk-in cooler unit in place of smaller reach-in for the cooling down process because, it can circulate the cool air faster.
  • Cut tomatoes and onions must be placed on ice or held at 41 degrees F. in a cooling unit. Do not set on counter at room temperature.
  • Must use a barrier, such as disposable gloves or tongs to handle ready to eat foods such as potato chips, when preparing plates for customers to consume.

i and my friends have been going to gems for thirty plus yrs. and have always enjoyed the food plus the cooks gladis&candy and owners of gems. i try to go at least twice a month to eat a great bowel of chile,and peper burgers.they have menu of other selections which makes it hard to select from since food is GREAT ! RON
