- Potentially Hazardous food not at required temperature in cooling unit. Manager states is having walk-in cooler maintenanced. Also states that received delivery this morning and the door was opened and closed often until 8:30a.m. Explained that food in cooler must be brought back to 41 Degrees F as soon as possible. Confirmed inspector will return in morning 3-25-11 to confirm cooler is maintaining temperatures.
- Employee did not wash hands before donning gloves for working with food. Please ensure that all employees practice good hand washing methods.
- 229.164 (f) (2) (A) (ii) (II) meat arrangement. Raw animal food stored above raw ready-to-eat food. Bacon stored on top of cut fruits and vegetables allowing for possible cross contamination.
- There is no backflow preventer present on sink by back door in dishwasher area.
- Hand wash station has no paper towels. Manager placed roll of paper towels near front hand wash sink.
- Evidence of rodents observed. Droppings found in back storage area.
- Chlorine concentration for chemical sanitizer in mechanical ware washing equipment not in line with PH/concentration chart. No presence of chlorination after dish run. Inspector instructed manager not to use until repaired and move dish washing to 3 compartment sink to ensure dishes are sanitized. Inspector also recommends that employees use test strips to regularly Check chlorination levels.
