  Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.
• 0610 - Repeat Food stored on the floor or food stored less than 6" above the floor.
  Elevate food storage onto approved shelving with minimum 6" legs or casters.
• 1690 - The pressure gauge for the high temperature warewash machine was above 25 PSI. Measured at 30 psi.
  Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. The range for proper operation is between 15 and 25 PSI. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.

• 2190 - Corrected During Inspection Water from the handwashing sink in kitchen was measured at a temperature less than 110F.

  Clean and sanitize the inside of the machine daily to prevent any mold or mildew formation.

  Remove the contact paper to prevent contamination of food or food contact items from the glue.

• 0480 - Leftovers are dated but not I.D.'d in freezer. Label or discard these.

• 0940 - Critical Dented cans of beans were stored in pantry.
  These were removed from the pantry at inspection time to be sent back to supplier. Mgr. will check can stocks upon delivery.
• 0610 - Drink dry mix packets were stored in baskets on floor of pantry.
  Baskets will be placed upon shelves in pantry or on containers at least 6" off floor.
• 3200 - Overhead exhaust hood at grill has a build-up of grease/dust.
  Hood will be washed and cleaned.
