This was a routine inspection. Food contact surfaces were noted to be visibly cleaned. There were no visible signs of pest.
However, the certified food manager was advised to complete processing her Food Sanitation Certificate and send it to our office by Fax or email to verify compliance .
Information on ORS Interactive was provided during this inspection to the Director.

  • Equip/Utensils/Linens/Single-Service/Elevation
    Observation: Boxes of single service containers and trays were observed stored directly on the floor in the kitchen storage areas.
    Correction: Elevate these items by placing them on racks, shelves or other approved methods.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided). A copy of the photo identification card can be faxed to the food safety section at (703) 653-9448. Failure to provide a copy of the photo identification card may result in further enforcement action.
  • Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids (repeated violation)
    Observation: Outside refuse container was uncovered. The top lid and the side sliding doors of the refuse container were observed to be opened.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment. Keep the lid and the sliding door closed tightly after each use to prevent entry of small animals including birds, creating unsanitary conditions.
  • Refuse / Area / Clean (repeated violation)
    Observation: Trash and litter were observed adjacent to the refuse container outside the facility.Trash and litter were noted on the ground within the dumpster fenced area. Trash was noted under the dumpsters.
    Correction: A storage area and enclosure for refuse, recyclables, and returnables shall be maintained free of unnecessary items and kept clean. Keep the area within the dumpster fence in clean condition at all times to prevent attracting pest and creating unsanitary conditions.

    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Food employees shall wear hair restraints such as hats, visors, hair nets or beard nets to effectively keep their hair from contacting exposed food, clean equipment, utensils, linens, and unwrapped single-service items. This section does not apply to food employees such as counter staff who ONLY serve beverages and wrapped or packaged foods, hostesses, and wait staff.
  • Critical: Permit to Operate Required, Must be Posted, Must be Valid
    Observation: The food establishment's Permit to Operate is no longer valid due to expiration of the permit on December 31, 2014. No person shall operate a food establishment unless that person possesses a valid permit issued by the Health Department.
    Correction: To obtain the 2015 Permit to Operate, contact the Health Department at (703) 246-2444 within 48 hours to make payment of the permit renewal fee. You may provide payment by cash, check, or credit card. Failure to pay the permit renewal fee and obtain the 2010 Permit to Operate within 48 hours may lead to further enforcement actions by the Health Department including immediate closure.

    Observation: The establishment has not posted the permit to operate in a conspicuous location.
    Correction: No person shall operate a food establishment unless that person possesses a valid permit issued by the Director. Only a person who complies with the requirements of this Chapter shall be entitled to receive or retain such a permit. Permits are not transferable from one owner to another. A valid permit shall be posted in every food establishment in a conspicuous place in the public view. Food establishment permits are issued for a calendar year and expire on December 31 regardless of the month of issue.

Close the dumpster properly after each use to prevent small animals from accessing the refuse creatin g unsanitary conditions.

    Observation: Cardboard boxes were noted on the ground in the dumpster area within then fenced area.
    Correction: A storage area and enclosure for refuse, recyclables, and returnables shall be maintained free of unnecessary items and kept clean. Break down the card board boxes and deposit them into the container and close it properly.

    Observation: Observed that the thermometer on the outside and inside of the Victory refrigerator was not maintained in good repair and broken.
    Correction: Repair and or replace the thermometers.Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy.
    Correction: A complete employee health policy must have the following elements:
    1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)
