Permit Issued. Protective Shield removed preventing raw prep materials from splashing on table where salads are often finished. Please reinstall to prevent raw materials from splashing over to areas where ready to eat foods are prepared or stored. Wiping cloths appear not be properly used and stored. Frequent use of Sanitized Wiping Cloths is necessary in areas where so much raw foods are prepared to prevent cross contamination.
