Violation: 0850 - Critical Tomatoes for which time rather than temperature is being used as a control was not labeled or otherwise marked with a 4 hour cook, serve or discard by time.
Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control. Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time.

October 24, 2008 (Routine)

Violations:

• 0820 A 2 - Critical FOOD in pass thru display cabinet cold holding at improper temperatures.
  Cold hold potentially hazardous food at 41F or below to inhibit the growth of harmful bacteria.
• 2310 - Critical The handwashing facility located at the breading and dish areas are blocked, preventing access by employees for easy handwashing.
  Access to the handwashing facility identified above is to be available during all hours of operation. Remove the trash can and mop bucket preventing its use.
• 2350 ii - PLUMBING at the mop sink in poor repair.
  Repair and maintain all plumbing components ans fixtures.
• 2890 - Repeat Light bulb above the front line and above the shoot not shielded, coated, or otherwise shatter-resistant.
  Shield or replace light bulb with a coated or shatter-resistant bulb.

may want to consider using time as a control for the tomatoes on the line by marking the time on the tomato pan
