Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a OT-40 test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
- Handwashing Cleanser - Availability (corrected on site)
Observation: Soap was not provided at the handsink near the bulk ice machine. Person-in charge had re-filled the soap dispenser during the inspection.
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

Observation: The food-contact surfaces of the equipment being cleaned in the dish machine were not observed sanitized. The machine was not achieving the 160'F water temperature necessary to properly sanitize equipment. Machine was only reaching a gauge reading of 170'F. Temperature sensitive sticker also indicated that proper temperature was not being reached. Maintenance person was called and the machine was repaired the during the inspection.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use.

Observation: Surfaces of the following equipment which were in contact with non-potentially hazardous food items were observed soiled with accumulations of grime and debris: 1-the dispersion nozzle of the coffee maker, 2-the ice chute of the soda dispenser. Both items were cleaned during inspection.
Correction: Clean the surface of equipment at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.

Observation: No disposable towels were provided at the hand washing sink at the front of the kitchen. Paper towels were provided during inspection.
Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Observation: The following nonfood contact surfaces have accumulations of grime and debris. 1-the interior of the smallwares storage drawer, 2-the top of the ice machine. Both areas were cleaned during inspection.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
