    Observation: Food in contact with equipment or utensils that have not been cleaned or sanitized as required. During discussion with an employee, it was discovered that the only time that the in-utensils were being cleaned was at closing. person in charge instructed employee to wash, rinse and sanitize utensils at least every 4 hours.
    Correction: Use only cleaned and sanitized utensils or equipment during food preparation.

    Observation: No disposable towels were provided at the hand sink. Paper towels were provided during inspection.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

    Observation: Single service coffee filters were observed unprotected from contamination. Filters were inverted during inspection.

    Observation: Observed employee touch her face with her gloves and then failed to wash his or her hands before engaging in food preparation, or after engaging in any activity which may have contaminated his/her hands.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately and don new gloves before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Correction: Relocate syrup bottles away from hand sink.

    Correction: Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.

    Observation: The hand sink is not sealed to adjoining equipment or walls.
    Correction: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.

    Observation: Several coffee storage drawers will not stay closed on their own.
    Correction: Repair the storage drawers to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the equipment, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
