Comments:
Lunch service was winding down at this inspection. Clean up in progress. Foods were being wrapped and date labeled and stored in a different refrigeration unit for rotation purposes. Also, hot foods in food grade containers were being ice bathed to cool them down before being placed in the refrigerator.

3080 - Less than 20 foot candles of light was noted in the dishmachine area (several tube lights burned out) Provide at least 20 foot candles at a distance of 30 inches from the floor in consumer self-service areas, inside equipment, warewashing, equipment storage, toilet rooms
3180 - Tube light cover shields in the back prep area noted in need of cleaning. All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Comments:
No critical violations. PIC was able to demonstrate the cooling process for the whole turkey breast from the 140 degrees to the 70 degrees in two hours and to the 41 degrees in four hours. Temperatures of foods are taken from cooking to the hot holding line. Hand washing and changing of gloves observed during this inspection. Inspector made suggestions to help out and maintain the 41 degrees cold holding food temperature in affect since March 01, 2007.
