Additional refrigeration is needed to accommodate the increased storage of fresh produce.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Ranch dressing(44F) & yogurt(43F) in 3 door reach-in refrigerator cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Unit is overstocked which may be contributing to increase in temperature. Relocate as much food as possible into the 1 door reach-in that is maintaining appropriate temperature. Monitor temperature of unit and food temperatures after unit has time to recover from morning prep. Adjust thermostat/service unit if does not recover.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gasket to the 2 door reach-in refrigerator is in poor repair. This may be contributing to unit not maintaining proper temperature.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
