    Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.

    Observation: Chlorine sanitizing solution used was not at an acceptable concentration.Container empty.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils. To minimize workload you can move to all single service utensils.

The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

Repair gasket on lowboy drawer.If ice scoops are stored in ice bins handles must be upright.Floor drain p-trap is dry creating an odor. Mix up bleach and water to eliminate odor.

    Observation: Cooked beef noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. If unable to repair the door, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: The water heater / boiler serving the food service establishment is not operating properly to supply food establishment with sufficient hot water supply.
    Correction: EHS is to confer with his/her supervisor for closure of establishment for an imminent health hazard. (See section 12 VAC 5-421-3910) Establishment will close until water heater is repaired.
