    Observation: Unlabeled food containers. Multiple bulk containers of food (chocolate, sugar, marshmallows etc., were observed unlabeled in the dry storage area of the kitchen). The PIC labeled the containers.
    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
  • Cloths - Wiping Cloths - Use Limitation (corrected on site)
    Observation: Wiping cloths improperly stored between use. Wiping clothes were observed stored in a sanitizing solution of 0 ppm in the kitchen. The PIC refreshed the sanitizing solution. The solution measured at 200 ppm (quaternary ammonium).
    Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • Equipment - Cutting Surfaces (corrected on site)
    Observation: The cutting board at the bar is heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition. The PIC replaced the cutting board.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Quaternary ammonium sanitizer concentration level in the wet wiping cloth bucket in the prep area measured 200 ppm. Chlorine sanitizer concentration level in the dishmachine measured 100 ppm. Facility is very clean and well maintained.

    Observation: Food stored in a location where it is subject to splash, dust or other contamination. Observed several uncovered food items in the bar cooler, such as cut fruit, and in the RIC in the kitchen area.
    Correction: Store food where it is not exposed to splash, dust, or other contamination to prevent contamination.

    Observation: The food contact surface of the EQUIPMENT is not durable, nonabsorbent, easily cleanable, resistant to pitting. 1. cloth covering the prepped vegetables in the RIC 2. cloth under the cutting board
    Correction: Repair or replace the EQUIPMENT to permit easy cleaning and prevent the migration of deleterious substances, or transference of colors, odors, or tastes to food.

    Observation: There is no covered refuse container for the disposal of feminine napkins in the ladies room stall.

    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Observed a gap under the back door to facility.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

    Observation: Light fixture cover in the employees' restroom is not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Quaternary sanitizer measured at 200 ppm. Dishwasher Chlorine sanitizer measured 100 ppm.
Establishment was not open during inspection. Only prep work was taking place.
Discussed with person in charge: A battery is needed in the sanitizer alarm on the dish machine.
Kitchen was very clean and well organized.

    Observation: Observed boxes of melting chocolate discs stored uncovered near the cook's area.
    Correction: Store food where it is not exposed to splash, dust, or other contamination to prevent contamination. Cover foods.
  • Equipment - Good Repair and Proper Adjustment
    Observation: The door gasket on both reach in coolers on the cooks line, and the walk in cooler are in poor repair. These gaskets are cracked and broken.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (repeated violation)
    Observation: Clean serving plates and bowls were observed stored with the food-contact surface facing upward on the serving line.
    Correction: Store equipment and utensils covered or inverted to prevent contamination while in storage.
  • Toilet Rooms - Enclosed (repeated violation)
    Observation: The employee toilet room door is not provided with a self-closing door
    Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.
  • Physical Facilities in Good Repair
    Observation: The light cover in the employees restroom is broken and needs to be replaced.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: Observed grime and food debris on the faucet handles to the cook's line handsink.
    Correction: Keep handwashing facilities clean and maintained to encourage proper handwashing.
