First inspection after opening. Kitchen appears clean. Handsinks are stocked with soap/towels. Employees are washing hands and wearing gloves when handling ready to eat foods (sandwiches/salads). Employee health policy available in kitchen and all employees are provided with a copy. Discussed the following with owner: insure that all ready to eat foods are properly date-marked for 7 day disposition (make sure all employees are either placing date on foods the day that they go into refrigeration or the date that they are to be consumed/discarded. Additionally, all commercially processed potentially hazardous foods (ricotta cheese) and bulk deli-meats should be date-marked. New owner intends to open sometime around the beginning of the year. Purpose of visit was to assess the existing physical structure of the establishment to determine if any improvements needed to be made prior to the transfer of owners. We discussed replacing ceiling tiles above all food preparation areas with smooth, non-permeable tiles.
