Employee health handouts provided -> please train on this topic. Cold foods 41 ° F or below. Hot foods 135 ° F or above. Reheating to 165 ° F within two hours. Thermometer calibration -> 32 ° F +/-2 ° F when placed in ice water for 30-60+ seconds. Gloves - when in doubt, wear or change your gloves. Wash when starting work, changing tasks, after touching hair/face/clothes/keys/cell phone - when in doubt stop & wash. Wash -> rinse -> sanitize -> air-dry. Store chemicals below and away from food and clean items.
