- The sanitizer level at the 3 compartment sink was at about 100 parts per million (ppm) quat. Sanitizer levels must be maintained at concentrations specified by the manufacturer label directions. Information posted at the sink indicated that sanitizer levels need to be at 200 ppm quats. Provide 200 ppm quats at 3 compartment sink. Violation was corrected during time of inspection. Sink was drained and refilled with a solution of 200 ppm quats.
