All food not stored in the original container shall be stored in properly labeled containers. Any pre-packaged food on display case , for customer self-service,must be dated accordingly.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Following need cleaning: exterior bottom of sinks, display cooler floors for self-service, interior of 3-comp sink-due to food debris/stains.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Floors along wallbases behind equipment,cabinets or shelvings inside W.I.C. & prep areas must be free of debris or clutter.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. Leaky pipe under 3-comp sink must be fixed.

DOOR GASKET OF FRONT UPRIGHT COOLER IS RIPPED,, BY THE DOOR HANDLE AREA, MUST FIX. THE LEDGE FOR BAGEL DISPLAY AT THE SANDWICH STATION MUST BE LINED, AS BARRIER
INTERIOR OF SMALL COOLERR AT BAKING AREA MUST BE KEPT CLEAN & FREE OF FOOD SPILLS/DEBRIS. THE BACK PARTS OF THE OVEN ARE DUSTY, MUST MAINTAIN CLEAN.
ANY MILK CRATES USED FOR DRY OR COLD STORAGE RACKS, THRU-OUT PREMISES, MUST BE REPLACED WITH REGULAR SHELVINGS, FOR EASY ACCESS TO CLEANING/PEST MONITORING.
