All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Small cutting board at corner prep station cooler must be replaced, due to deep cuts/grooves. Also must re-seal/caulk around handsink at front prep station, to avoid water seeping thru the sink counter.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Following need cleaning: bottom attachments of dishmachine, interior floor of cooler drawers, due to food stains/debris.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Floors around corners of coolers, around grease trap,
The walls and ceilings shall be in good repair and easily cleaned. Must replace caulking between wall & splash board of dishmachine, & around corner handsink's splashguard.

The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. OBSERVED FOOD BUILD UP ON FLOOR UNDER AND AROUND SHELF RACKS, SINKS, COOLERS AND COOKING EQUIPMENT IN PREP AND DISHWASH AREA. MUST DETAIL CLEAN FLOOR AND MAINTAIN.
The walls and ceilings shall be in good repair and easily cleaned. OBSERVED FOOD DEBRIS ON WALL BEHIND CUTTING TABLE IN REAR PREP AREA. MUST CLEAN AND MAINTAIN WALL ALSO MUST REPLACE DAMAGED CEILING TILE ABOVE REVOLVING DOOR.
