The walls and ceilings shall be in good repair and easily cleaned. The brick walls against the clean dish racks are rough and unsanitary, cover said wall so it can be easily cleaned and maintained.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. Shield all kitchen lighting and above the ice machine.
Between uses and during storage ice dispensing utensils and ice receptacles shall be stored in a way that protects them from contamination. The ice scoops were found in an unsanitary bucket, the scoops were washed, rinsed and sanitized at this time.
