THE FOLLOWING NOT CLEAN- FOOD DEBRIS ON PREP AREA SHELVES, FOOD BUILD UP INSIDE PREP COOLER DOOR GASKETS AND EXTERIOR OF SINKS. MUST CLEAN AND MAINTAIN ALL UNCLEAN EQUIPMENT.

All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. NO THERMOMETERS INSIDE PREP REACH IN COOLERS. INSTRUCTED MANAGER TO PROVIDE THERMOMETERS FOR ALL COOLERS.
