All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST INSTALL SPLASH GUARD BETWEEN DISH MACHINE AND EXPOSED HAND SINK. MANAGEMENT REMOVED ALL CARDBOARD FROM SHELVING IN COOLERS AND STORAGE DURING INSPECTION.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. TO GO CONTAINERS MUST BE PROPERLY STORED ON CLEAN SURFACE.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. EMPLOYEE PERSONAL BELONGINGS MUST NOT BE STORED IN FOOD PREPARATION AREAS.

All food establishments that display, prepare, or store potentially hazardous food shall have adequate refrigerated food storage facilities. FACILITIES DO NOT MAINTAIN PROPER TEMPERATURES. OBSERVED 3 DOOR PREP COOLER WITH AN AIR TEMPERATURE OF 48.7F. THE COOLER WAS BEING USED TO STORE POTENTIALLY HAZARDOUS FOODS. UNIT TAGGED HELD FOR INSPECTION. MUST MAINTAIN THE COOLER BELOW 40F. CRITICAL VIOLATION 7-38-005A.
All cold food shall be stored at a temperature of 40F or less. POTENTIALLY HAZARDOUS FOODS STORED AT IMPROPER TEMPERATURES. OBSERVED TAMALES AT 46F, COOKED BLACK BEANS AT 49F, COOKED RICE AT 49F, COOKED BEEF AT 50F, SOUR CREAM AT 48F, AND COOKED STUFFED PEPPERS AT 47F. MANAGEMENT VOLUNTARILY DISCARDED 10# OF FOOD WORTH $25. CRITICAL VIOLATION 7-38-005A.

OBSERVED LIVE FRUIT FLIES IN THE DISHWASH AREA AND THE BAR AREA. APPROXIMATELY 40 LIVE FRUIT FLIES WERE OBSERVED ON THE WALLS, CEILING AND EQUIPMENT IN THESE AREAS. ADDITIONAL PEST CONTROL SERVICE IS NEEDED TO MINIMIZE OR ELIMINATE THE PEST ACTIVITY. ALSO, THE REAR DOOR FROM THE PARTY ROOM IS NOT RODENT PROOF. THERE IS A 1/2' GAP ALONG THE BOTTOM OF THE DOOR. MUST RODENT PROOF THE REAR EXIT DOOR. SERIOUS VIOLATION 7-38-020.
