The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. INSTRUCTED TO CLEAN FLOORS ALONG THE WALLS AND IN ALL CORNERS ESPECIALLY UNDER AND AROUND COOKING EQUIPMENT WITH DRIED FOOD DEBRIS AND FLOORS UNDER AND AROUND HOT WATER TANK.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. INSTRUCTED TO PROVIDE WORKING DRAIN STOPPERS AT 3 COMPARTMENT SINK.---------MUST REPAIR LEAKY FAUCET NECK AT 3 COMPARTMENT SINK.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INSTRUCTED TO CLEAN AND MAINTAIN INTERIOR AND EXTERIOR SURFACES OF REACH-IN COOLER IN REAR PREP AREA.

Floor behind equipment, along wallbase not cleaned. Instructed to detail clean daily.
Coving not installed behind three compartment sink. Instructed to install coving.
Thermometer not provided inside rear one door cooler. Instructed to provided thermometer visible inside cooler.
Food handlers not wearing hair restraints. Instructed to provide proper hair restraints for all food handlers.

Food handler not following good hygienic practices. Observed female cashier ringing up customers orders, handling cash register, wipe hands on wet cloth and proceed to grab hot dog buns and make food order without proper hand washing. Instructed that food handler/cashier must properly wash hands between all duties. Critical citation issued 7-38-010(A).
Violation #18 now corrected.
Violation #40 now corrected.
