All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST DETAIL CLEAN AND MAINTAIN GYROS MACHINE AND CABINETS/SHELVES THROUGHOUT.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST DETAIL CLEAN AND MAINTAIN FLOORS IN BASEMENT, IN ALL CORNERS, AND UNDER/AROUND ALL HEAVY EQUIPMENTS. MUST REPLACE/PROVIDE ALL MISSING/DAMAGED FLOOR TILES IN PREP AREA.
Use dustless cleaning methods. The walls and ceilings shall be in good repair and easily cleaned. MUST DETAIL CLEAN AND MAINTAIN VENTS IN WASHROOM, WALLS BEHIND AND AROUND 3-COMP. SINK.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. MUST PROVIDE A SHIELD TO THE LIGHT INSIDE OF THE WALK-IN COOLER.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. MUST REPAIR THE LEAK AT THE BASE AND UNDERNEATH THE 3-COMP. SINK IN THE FRONT PREP AREA. ALSO, MUST HAVE FAR RIGHT COMPARTMENT DRAIN FIXED OR PROVIDE AN ADEQUATE PLUG FOR IT ON SAME SAID SINK.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. MUST REMOVE ANY/ALL UNUSED EQUIPMENTS (I.E. FREEZER, ICE MACHINE ETC.) FROM BASEMENT IN ORDER TO PREVENT PEST HARBORING SITES.
