ANY SODA CRATES USED FOR STORAGE RACKS MUST BE REMOVED/REPLACED WITH REGULAR SHELVINGS THAT'S ELEVATED OFF THE FLOOR, FOR EASY ACCESS TO CLEANING/PEST MONITORING.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. FOLLOWING NEED CLEANING: EXTERIOR SIDES OF COOKING EQUIPMENT & COOLERS, GASKETS OF COOLER DOORS-DUE TO FOOD DEBRIS, SPILLS OR STAINS.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. FLOORS AROUND GREASE TRAPS, UNDER SMALL SODA COOLER AT FRONT, AROUND CORNERS INSIDE THE WALK-IN COOLER, UNDER SOME FRYERS- MUST BE FREE OF DIRT/DEBRIS.

Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. THE A/C WASTE WATER LINE MUST EXTEND TO THE FLOOR DRAIN OR AN AIR GAP, FOR PROPER DISPOSAL.
