Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. Must repair all leaks at pipes and faucets at 1-compartment and 2-compartment sinks throughout.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Prep reach in cooler rubber door gasket ripped underneath grill. Instructed manager to repair or replace damaged gaskets.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. The following not clean- observed slight lime build up inside ice machines, accumilated food debris on lower side of dishmachine drainboards, food build up inside prep coolers door hindges/corners. Instructed manager to clean and maintain all unclean equipment and maintain.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Must regrout all damaged floor tiles at 1st floor prep area and make floor smooth and easy to clean throughout 1st floor prep.
The walls and ceilings shall be in good repair and easily cleaned. Observed unclean ceiling light covers at 1st floor prep and dishmachine room. Instructed manager to clean all unclean covers.
Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. Must provide light bulb cover inside food walk in cooler at 1st floor prep area.
All food establishments that display, prepare, or store potentially hazardous food shall have adequate refrigerated food storage facilities.
