All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST CLEAN AND MAINTAIN INTERIORS OF REFRIGERATION UNITS. RUSTY OBSERVED ON SHELVES OF WALK-IN COOLER; CLEAN/PAINT.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST CLEAN INTERIOR BOTTOM CABINETS OF FRYERS TO REMOVE GREASE. CLEAN EXTERIOR OF FRYERS AND OTHER COOKING EQUIPMENT WHERE NEEDED. CLEAN FAN GUARD COVERS INSIDE WALK-IN UNIT.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. CLEAN FLOORS UNDER, AROUND AND BEHIND ALL KITCHEN AND OTHER EQUIPMENT WHERE NEEDED. REMOVE WHITE POWDER SUBSTANCE IN CORNER AREAS AND UNDER REAR STORAGE SHELF NEAR WASHROOM.
The walls and ceilings shall be in good repair and easily cleaned. Use dustless cleaning methods. CLEAN ALL CEILING VENTS TO REMOVE DUST INCLUDING VENT IN WASHROOM. CLEAN FAN ON WALL TO REMOVE DUST, COVER HOLE IN CEILING IN PANTRY AREA AT SIDE OF KITCHEN, REATTACH WALL COVING AT WALLBASE IN WALK-IN COOLER.
All rooms in which food or drink is prepared, or in which utensils are washed, shall be lighted so that a minimum of 50-foot candles of light is available on all work surfaces. Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. PROVIDE LIGHT BULBS FOR LIGHTS THAT ARE OUT, PROVIDE LIGHT SHIELDS WHERE NEEDED FOR LIGHTS IN FOOD PREP AREAS.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. MUST FINISH CLEANING GREASE TRAP AT THREE COMP SINK. CLEAN EXTERIOR OF TRAP; PAINT IF NEEDED. PROVIDE HOT RUNNING WATER AT UTILITY SINK, REPAIR TOILET; NOT WORKING PROPERLY. ALSO REPAIR OR REPLACE FAUCET AT WASHROOM SINK.
