All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST REPLACE SOAP DISPENSER IN PREP AREA, IN POOR REPAIR.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST CLEAN AND MAINTAIN MOP SINK IN REAR OR PREP AREA.
Use dustless cleaning methods. The walls and ceilings shall be in good repair and easily cleaned. MUST REPLACE BOTTOM ATTACHMENT ON REAR DOOR BY KITCHEN IN POOR REPAIR.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. MUST REPAIR OR REPLACE FAUCET/TIMER WORN,WATER FLOW DOES NOT STAY ON.TO ALLOW ADEQUATE HAND WASHING.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. MUST REMOVE DROPPINGS,SANITIZE AFFECTED AREAS AND HAVE THE PEST CONTROL COMPANY SERVICE AREAS. ALSO OBSERVED LIVE SNAKE ON GLUEBOARD NEXT TO REAR KITCHEN EXIT DOOR. (CUSTODIAL STAFF REMOVED SNAKE AND GLUEBOARD DURING INSPECTION) ALSO NOTED APPROIMATELY 1/4 INCH GAPS ALONG BOTTOM AND BETWEEN TWO REAR KITCHEN EXIT DOORS. EXTEND WASTE LINE TO FLOOR DRAIN OUTSIDE WALK-IN FREEZER #2. REPAIR SINKS AND PROVIDE VENTILATION IN THIRD FLOOR WASHROOMS.
