The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. CLEAN FLOORS IN BASEMENT WITH WATER AND DEBIS AND AT REAR PREP AREA UNDER FREEZERS ALSO WITH DEBRIS,AND MAINTAIN DRY AT ALL TIMES. CLEANED UNTENSILS STORED ON FLOORS AT REAR STORAGE AREA MUST BE ELEVATED 6' OFF THE FLOOR AT ALL TIMES.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. CLEAN EXPOSE SINK,3COMP.,DRAIN BOARD AND DISH WASHER RACK ON DRAIN BOARD WITH DEBRIS. ALSO CLEAN MID COMPARTMENT OF CHINA BURNER UNDER HOOD.
The walls and ceilings shall be in good repair and easily cleaned. CLEAN WALL BY EXPOSE HAND SINK WITH FOOD SPLASHES.
