Side overhead door in middle has broken concrete floor and has 1/4 inch opening at bottom and west side exit dual doors has 1/4 inch gap in middle and front set of dual doors has 1/4 inch opening on sides of doors. Instructed to rodent all doors to prevent rodent and insect entry. Serious citation issued 7-38-020.
Dish washing facilities not maintained or operated. While running and draining water in three compartment sink in deli area, water coming up from air gap floor drain. Instructed to detail clean drainlines and grease box to prevent inadequate disposal of waste water. Serious citation issued 7-38-030.
Potentially hazardous foods does not meet temperature requirement during storage, preparation, display and service. Found assorted hanging sausage behind deli counter at 59.7 F to 59.9 F. Establishment has labortary testing, however report does not indicate water activity. Instructed that water activity must be .85 or less for product to be shelf-stable. Critical citation issued 7-38-005(A). Manager voluntarily denatured and discarded. Value $274, 71lbs.
