- Observed improper storage of food items. Observed food items/boxes on the ground at walk in freezer & at dry storage area. Store food items/boxes at least 6 inches off of ground.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
- Observed a build-up of dirt and debris. Observe dirt & debrtis throughout back dry storage areas. Clean & remove dirt & debris off of ground.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.

- Critical: TCS foods were not being held at the proper temperature. Deli meats & cheese display cooler holding at 45-48F. Monitor display cooler - call service out to adjust temperature if needed.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
- Observed a build-up of dirt and debris. Clean floor at back storage area concentrating on hard to reach areas (i.e. in corners, under shelving, at/around dock areas, etc.) to remove food & debris.
