  • Proper hot holding temperatures
    General Comment. The breakfast potatoes are cooked in large batches and are not being kept under temperature control, but have a 2 hour hold time. Recommend either keeping the potatoes hot at 135F or above, or using time in lieu of temperature(TILT) controls. Using TILT the potatoes would be labeled either for the time they were removed from temperature control or for the expiration time 2 or 4 hours after they were removed from temperature control. If the potatoes are not used with in that time frame they must be disposed of.
  • Utensils & equipment properly stored, air-dried, handled
    The clean utensils on the racks across from the dish machine have crumbs and spills on them. These utensils need to be stored in a location where they are less likely get spills on them (relocate rack) or maybe keep them in clean containers to protect them from splashes.
  • Food received at proper temperature
