    General Comment. Need to replace a couple of burned out light bulbs beneath the hood.

    General comment. Plates are being stored in one of the walk-in coolers. When the plates are put in the cooler warm, condensation is getting between the plates.

    Repeat. Cleaning needed on floors, wall, and ceilings around air vents. The floor especially need cleaning beneath equipment.

    The cleaning on the clean-in-place equipment on the chef's line looks much improved since last inspection, but the inside of the ice machine and some of the plates need more thorough cleaning.

    The condenser is leaking in the starbucks freezer and in the large walk-in cooler. Some of the shelving is chipping in the upstairs beverage cooler. The booster heater is rusted out on the utensil sink.

    All of the equipment in the kitchen needs cleaning. Some specific item include: the insides of the hot boxes, outsides of equipment, condenser fans in walk-in coolers, the wait stations counter tops and storage areas, beverage prep sinks, and the equipment on the chef s line and lower shelves of prep tables.
  • Proper cold holding temperatures
    General Comment. The beverage cooler had food temps between 45-49F. The half and half was 45F the bloody Mary mix was 49F. Recommend moving potentially hazardous items to another cooler until this cooler is maintaining safe food temp.
  • Warewashing facilities maintained; test strips used
    General Comment. The curtains and spray arms inside of the dish machine need cleaning. Dish machine is not meeting sanitizing temps.

    General Comment. There is a condenser fan not working in the Starbucks freezer and there is condensation buildup around the fan. Need to replace a handle on one T & S sprays at a beverage prep sink.

    Need to keep the dish machine racks stored above the floor. Water and debris from cleaning is getting trapped beneath them and creating a potential harborage area. Be sure to keep brooms and mops hanging above the floor. There were several brooms and extra tables wedged in behind some of the coolers.

    Repeat. All food contact surfaces need to be cleaned and sanitized. The kettles on the chef's line had food debris in them, the soda nozzles at the beverage station need cleaning, the inside f the ice machine in the main kitchen needs cleaning. Need to improve cleaning on utensils. The final rinse cycle on the dish machine is not reaching high enough temperatures to sanitize.

    All food contact surfaces need to be cleaned and sanitized. The drink nozzeles at a drink station needs to be cleaned, plates found stored under air return were found dirty. Need to be sure booster heater is functioning properly to obtain proper sanitizing time and temperature for dish machine

    All of the equipment in the kitchen needs cleaning some specific item include: the insides of the hot boxes, outsides of the coolers, shelving in the cooler, the wait stations. beverage prep sinks, and the equipment on the chef s line and lower shelves of prep tables.
  • Garbage properly handled & disposed; containers properly maintained
    General Comment. Need to clean the large rolling trash bin.
  • Doors self-closing where required; all windows screened
    General comment. The door of the women's employee restroom needs to be self closing-the door gets stuck on the frame.
  • Warewashing facilities maintained; test strips used
    Need to repair the strainer for the wash tank on the dish machine-caulking is not a sufficient repair. There is a leak at the front corner of the dish machine at the dirty drain board. Need to clean the curtain on the wash side of the dish machine.

    Need to improve cleaning on the lids of kettles, icemachine, mixer, clean-in-place equipment. Several of the cleaned plates had oily residue on the backs of the plates. Some of the coffee cups needed more thourough cleaning.

    Repeat. Floor cleaning is needed beneath and behind equipment. Need to replace the missing ceiling panels in front of the beverage walk-in coolers.
