I just recently began dieting and exercising (mainly running), went from about 210 to 180 today in a little over a month.
Although I am a newby to this dieting concept, I disagree with most of the comments I've read so far. The first thing is that not all calories and carbohydrates are created equal. That is they key to the entire losing weight premise. Eating a taco from Taco bell will give you 80 calories and 17g carbs. And who can eat just one of these? If you ate moderately, you would eat at least 5 of them. Bam, you just ingested 85g carbs (400 calories) - add soda (46g), fries (48g) and that will bring you to about 200g carbs - and this is not even a "big" meal.
I eat moderately, and when the Taco Bell was open around here (it's closed down), I'd normally eat two regular crunchy tacos with "fire" sauce. That would be my lunch. I drink water, and Taco Bell doesn't make french fries so I don't know where you're getting that from. Each taco is approximately 170 calories, so that's 340 calories. 180 of those calories are fat. Sodium is 620 grams - 24 grams of carbs - that's right, just 24 grams. Too high in sodium, but I only ate there maybe once a month if I was late to work and forgot to get my lunch out of the fridge at home that morning.

I can take 2 chicken breasts, bake them, and a good portion of spring salad with olive oil, vinegar, drink water and I will be under 10g carbs in one sitting and I will be more satisfied than you. I really don't count the calories I eat because all calories are not equal, so it doesn't really help much.
Good luck doing that with a 1/2 hour lunch break or worse - a 15 minute break during your 5-hour shift that started 2 hours after you ate breakfast.

Is it hard to stay on a low carb diet? sure it is. One thing I am personally struggling with is bread and rice - I have eaten bread and rice all my life, so removing it from my diet is not easy. I have been eating whole grain bread once in a while, but I just stopped that as well.
Low carb doesn't mean no carb. It doesn't even mean "completely eliminate the primary foods that you have been consuming your entire life. It means instead of a 2-slice sandwich, have a salad and one slice of bread. Instead of a whole cup of rice, have 1/4 cup of rice. Instead of eating it every day, eat it every other day.

So again, the key to low carbs is to replace what you eat (quantity) - not the quantity of what you eat
No, the key is to reduce the carbs, not to eliminate them. Quantity is exactly what you want to look at. That's why it's "low" carb and not "different" carb.
There's no real way to eliminate all carbs. You'll need them as your body will tell you when & how much to keep you going. Just keep it low as you can, as food cannot be just a wing-it pleasure but rather a needed item. I just go as long as I can daily then eat health until I reach a point where I feel ok. This works well, sorta like a off & on fast, & lowers so many things including lbs. If I need to eat (very few ever experience "true hunger") then I just add a few bites of an apple or handful walnuts & then see again how long -- til I can finally just stop for the day & go to bed & repeat the next day, etc.

I actually think that "different" carb is far better. Carbs that are high in fiber slow digestion and produce a feeling of satiety better than anything else. They are also very healthy.
Most people eat far too much refined white carbs and too few whole grains.
Low carb diet cut down inflammation, so your joints don't feel painful, you also don't feel groggy, you are more alert and energetic. Low carbs curb hunger.

For some, not all.
