There is no such concept. You won't have any stereotypes, because Europeans don't even think of such a thing.
Latin Americans are very rare in Europe outside of Spain. You won't find too many random Ecuadorians or Mexicans or Colombians in Poland or France or wherever. It's kind of "off the radar".
If you are fully Americanized you will just be another Yankee, probably.
Aside from London, the UK has the fourth largest population of ex-pat Colombians in the world and there are a lot of Brazilians and Ecuadorians too. In total about 400,000 from these three nationalities. But true that it's not in the national pyche as a group therefore "off the radar".
Italy..very well assimilated..also Paris.
US latinos usually work for the administration..consular offices...most look spanish because there families were spanish.

When I think Europe, I think the Continent, but, that said, the UK doesn't have a large Latin American population either.
I have no idea where you came up with "400,000" people in the UK from Brazil, Ecuador and Colombia. The real number is just over 90,000, per the UK govt. In a country of 66 million, 90,000 people is nothing, especially since they almost all live in one part of the country (SE).

what's up with people out of Europe asking if it will be okay here? no, it will not be okay, as soon as you will set a foot in the continent, everyone will watch you strangely and suspiciously, point the finger at you and require a full check up of your history from where have you been born and what underwear you put under your clothes.
Assuming under "Europe" you mean...Europe (e.q. Eastern Europe too) then the answer is: it depends.
If you're too dark Latino you might get mistaken for a gypsy and hence this will be very negative association. If though you're Mestizo or "Ricky Martin" then you'll either look like Asian or like local to the locals so the association will be positive. This is especially true for Romania, Bulgaria, Hungary etc, probably it's not the same in Russia or Ukraine.
There's no concept of Hispanic or American Latino here as someone's already said. I think you would be better off going to Milan and Barcelona because there are already large communities of Latin Americans there. Milan has 21k Peruvians, 13k Ecuadorians alone and 5k Salvadoreans (on the whole 50k citizens from the Americas) and there are several more in the suburbs. The Spanish speaking community is even larger give that Filipinos are the largest foreign community and a decent number of them usually know a fair bit of Spanish
Anyway, most people won't care either way, Western Europe isn't more discriminatory than the United States are, you should be fine

In contrast, there are about 20 million Latin American immigrants in the U.S. So it's an enormous difference.
There are six times as many Ecuadorians in Genoa than there are in the whole of the UK. That's surprising. The largest group of Southern Americans in Italy is Peruvians though

That's not true
After a quick research, i have found out there are 110k Peruvians in Italy, 91k Ecuadoreans, 43k Brazilians, 29k Dominicans, 20k Colombians, 20k Cubans, 15k Bolivians, 13k Salvadoreans. These are decent numbers.
