I depend on the taste of the dog itself. Grilled and the bun all nice and toasty. Tastes best if there's a nice baseball game being played in front of me.
I had "minimalist dogs" the other day. That's grilled hot dogs on toasted buns with just a thin strip of yellow mustard on the dog. Pretty dog darn good that way.

I've eat them right out of the package even without the bun. Just about anything you can think of I've tried. Never tried tomatoes on one though. Mustard relish along with jalapeno relish & chopped onions and some ketchup makes a good combination for me.
If we go to Deerhead, The Dog House, or The Last Stand, I get mustard, onions, and sauce. If I'm home, mustard, onions, and relish. I need to learn how to make a good sauce for hot dogs.
On a Chicago hot dog, I'll have the works (mustard, celery salt, onions, bright green relish, pickle spear, and tomato wedges IF they look good--no nasty tomatoes, please--on a poppyseed bun).
On a regular hot dog at home (Hebrew National or other beef frank), I'll have ketchup and relish.
Brats get a variety of mustard, sometimes sauerkraut.
