We decided on enchilada's, refries with cheese and sour cream. Easy meal and am I happy!!

Anyway, hello everybody, I sure have missed y'all! Got the day off today, so I am catching up with everything.
Am making bbq pork steaks, with slaw and potato salad, I think I will make a lemon cake for dessert.

Yummy! That reminds me.....haven't made my enchiladas in awhile. Will have to pick up the ingredients to make them later this week.

LaceyEx, you were my angel last night (gave you rep points). I fixed the frittatta (sp?) and dh thought it was wonderful. I surprised myself!

Denise, thanks for helping me decide on tonight's main course. I picked up some thick pork chops. I don't know how I'll cook them yet...probably just on the grill since the weather is nice. Of course, have to have smashed potatoes and gravy and another TBD. I would like to fix a dessert, but we still have SOOOOO much candy left from Valentine's Day.

This is the best thread on CD!

One idea for cooking pork chops is......saute' an onion and some mushrooms in a bit of butter....add pork chops..when white on both sides. Add some garlic powder, seasoned salt and pepper.
Add couple of cans of cream of mushroom soup. Simmer for a couple hours.

This can also be done in the crockpot in the AM..by the time dinner is served the chops are falling off the bones. So good...So fattening!

I usually make mine with some homemade applesauce.

Oh yes... I don't know if it's a regional thing? I was born and raised in the foothills of the Smokey Mountains. My grandmother served gravy with almost every meat dish and bless her heart she showed me how. We don't have it too often...I don't think it's very healthy and it's loaded with calories, but we sure do love it!

Beef & pork = brown gravy
Sausage and poultry = cream gravy
Ham = Red eye gravy

Why is it called sauce if it's served with rice or noodles?
