The crock pot/BBQ chicken turned out very good. The recipe called for 8-10 hours on low. We cooked it for 8.5 hours and the chicken fell apart, so, like Suncoast Guy, it was "over" crocked (sorry, SG, I'm sure you meant oven fry - couldn't resist). I oven roasted a humongous sweet potato cut into wedges and steamed some broccoli.

Alright I am now convinced...we will do barbecued chix in the oven with sweet potatoes and some broccoli...thanx NMS!!!
It's been busy here today. We just finished dinner. My DH had Beef Stew that I had in the freezer with cornbread. I had Shrimp Creole modified. I added extra tomato sauce and carrots to the mix. It was good but not great.

The sesame chicken was bland, bland, bland following the diabetic recipe so I won't be taking that to the "patient". I made extra rice to chill for fried rice or rice pudding later in the week but we filled up on the rice tonight. Have to tell ya how the next diabetic recipe I try is but this one is not a keeper.
I'm extremely freaked out about work and money, so this is how I am eating from now on!
