Calling all cooks- I want to make a spinach salad this week and I like the warm bacon dressing you put on it. I had a recipie and can't find it, anyone have one that you would like to share?

There are lots of recipes for bacon dressing on line.....I just looked at a few of them.....and they are different (healthier) than what I am used to making without a recipe.

I don't follow a recipe but this is what I do....... fry up about 1/2 lb of chopped bacon and remove from pan when crisp. remove some of the fat but leave about ? 4 Tablespoons in pan--perhaps more..fry some chopped onion in the fat......add about 1/2 cup water and 3/4 cup of vinegar and sugar....enough to sweeten the vinegar.almost a cup...? cook together and thicken with some corn starch disolved in a little cool water; some lemon juice can be added as well as the vinegar.....celery seeds or caroway can be added..... cook to thicken a little . cool slightly before pouring over spinach, red onion and perhaps hard boiled egg.

Like I said i saw recipes that used salad oil instead of bacon grease and more precise measurements. I cook by taste and feel and it is a process of correction....too sweet? add more vinegar or lemon....to sour add more sugar....

this is good on hot potato salad too. (I have also thickened it by adding flour to hot grease.....then when you add liquids and bring to boil it thickens.....but you dont want it too thick....not as thick as gravy.

Another left-over night. I'm starting to like these days I don't have to cook. Means I don't have to be on my feet while food is cooking.

I'm thinking of garlic panko chicken on spaghetti, with a tomato/garlic/white wine sauce, green salad. Thinking...not cooking.

Fried chicken breast strips coasted in Italian bread crumbs with potato salad and a veggie of wife's choice. She's cooking tonight. I'm just the navigator for a change. There is 1/2 of a chocolate pie left that is almost like a chocolate cheese cake. Rich so the portion will have to be small. Wife is cooking cause I'm beat. After 4 hours of playing the part of the midwife for 5 new kitties I'm exhausted just watching our beloved mama kitty deliver. I took lots of photos during the deliveries and that kept me busy. I'm off for a pre supper nap. I think we will celebrate the occasion with a nip of the Fino in the fridge...
