Fish tacos tonight, I think. Something fast and easy will be good, as there's still lots to do in preparation for Thursday.

If we are home Thursday I think a standing rib roast for the two of us will be fine and dandy. Being we only cooked one a long time ago any tips on the best method in the oven would be most appreciated.

Noma my sis-in-law swears by this. Let roast get to room temp, season, into 350 oven for 1 hr. Shut oven off and do not open door. One hour before eating turn oven back on at 350.

Weill this get an average size roast to medium well? We do not like rare meats. Just a touch of pink in the middle is perfect.

Noma: We are getting a 2 rib Angus seasoned standing Rib Roast, my meat specialist told me to put the roast in a 500 pre-heatred oven for 30 mins. turn oven down to 275 and roast an additional 30 mins. let rest 15 mins. to a perfect med. rare.

When I do an eye round my recipe is similar to Lacey's. Preheat oven to 500, turn oven down to 475 as soon as you put the roast in, roast 7 mins. per lb. Shut oven off, DO NOT OPEN oven door for 2 1/2 hrs. Perfect med. rare roast beef.

Noma: If you do it my way get a good meat thermometer and keep in the oven longer and check the temp.

Thanks kelsie. I know this in not as simple as doing a chuck roast with carrots and potatoes as we normally do. It is going to be a learning experience.

We have one that is on a probe. I'll look up the temp for medium well and go by that.

Thanx Kelsie-Noma she says hers comes out perfect medium rare. It's too expensive a hunk of beef to ruin!! We'll get a 3 ribber for New years Day and that way lots left for delicious soup.
