I'm thinking about making some lemon chicken breasts to go with pasta tonight....I may need a little help here though...The chicken breasts are boneless, skinless so I'm worried about them drying out during baking. Also I'm not to sure how long I need to bake them and at what temp. I was thinking I could wrap them in a foil pouch with some lemon juice...think that would work? Any suggestions here???

Cyn why not pan saute in little olive oil, lemon juice, garlic? Even capers if you have them.

Sounds good but for how long? These are fairly large breasts!

Good morning everyone!!!!!!!!!!

Cyn - I always cook my chicken at 350 unless I have a specific recipe that says otherwise. I think the foil is a great idea! Don't put too much lemon on though or you'll have puckered faces lol.....this coming from experience. LOL If you don't want to do the foil, just put a little chicken broth or even lemon juice at the bottom of a casserole dish and baste or turn them over it every so often to keep the outside from getting hard. For a regular chicken breast I would think at least 35 - 45 minutes.

We're having chicken tonite too, I just don't know with what yet.

Boneless? Just lightly flour, brown add garlic, lemon juice, white wine, parsley cover and cook about 20 min. Maybe cut into one to make sure done. or cut breasts into strips.

Hmmm that sounds good...I think this is what I'll do tonite. Maybe some mashed taters to go along with it. Or rice.

Can I do this with cutlets too? I always buy cutlets.
