I'm gonna roast a couple little pork sirloin roasts today and have with kale and lentils. Leftovers will be made into a soup and frozen for next week.
Hmmm I just remembered I have some carrot chips in the fridge. I wonder if those would roast in the 35 minutes the sirloins will be in the oven? They're sliced pretty thin. Should I steam them in the microwave first?
What temp are you roasting the pork? If highter than 375 I think the carrot chips would roast -if 350 I would steam them just a little first either in microwave on in basket on top of stove.
Tonight will be beef tips with a red wine sauce over egg noodles, spinach with mushrooms/bacon/hard cooked eggs, a loaf of French bread with warmed garlic dill butter and a bottle of merlot. Still not up to making any dessert, although my cold is finally getting better.
A raspberry nonfat Greek yogurt, 3 toasted slices of whole wheat/grain bread with healthy-style margarine & marionberry jam and a mug of black tea with a teaspoon of sugar.
