What temp are you roasting the pork? If highter than 375 I think the carrot chips would roast -if 350 I would steam them just a little first either in microwave on in basket on top of stove.

Tonight will be beef tips with a red wine sauce over egg noodles, spinach with mushrooms/bacon/hard cooked eggs, a loaf of French bread with warmed garlic dill butter and a bottle of merlot. Still not up to making any dessert, although my cold is finally getting better.

A raspberry nonfat Greek yogurt, 3 toasted slices of whole wheat/grain bread with healthy-style margarine & marionberry jam and a mug of black tea with a teaspoon of sugar.

Tonight we're actually having bone in pork chops cooked in a crock with apples and cream of mushroom soup. Mashed potatoes and green beans.

Quick and dirty. A quiche thrown together with some sauteed peppers, onions and garlic. I might roast some sweet potatoes, or I might not.
