Meat loaf, I made 2 yesterday, one for a friend who is having knee repair today and one for us. Also having Asian salad (don't ask, I just made it up) and a carb of some sort. This week will be better than last.
Tonight meatloaf with onion, garlic, ginger, green chilies, salt, bread crumbs, egg, fresh coriander ,garam masala powder, served with garlic mashed potatoes and a tomato and spinach salad. To drink lassi. For dessert again 1/2 a pink grapefruit.
I can't believe my luck this winter/spring with the grapefruits, juicy, tasty and still on sale
I pulled some red sauce out of the freezer. I'll heat it up with sweet Italian sausages. I'll make some spaghetti too. When the snow slows down I'll go out and get some fresh crusty bread to serve with it.
Roasted a whole chicken yesterday and made stuffing, cranberry sauce, mashed potatoes and gravy, spinach salad with a warm bacon dressing and lemon pound cake. We will be having hot, open-faced chicken, stuffing and cranberry sauce sandwiches on toast tonight with sweet pickles and the rest of the cake.
Spencer steak, which is really ribeye but cheaper, baked potatoes and either asparagus or frozen corn on the cob since it's too early for fresh corn. WISH I could have some fresh corn!
Two sandwiches - made of Butternut bread with mayo (Hellman's) on them, followed by some very thinly sliced cheddar cheese, crunchy iceberg lettuce, some thinly sliced tomatoes, topped by a bunch of egg salad that I'm about to make. And a huge glass of milk. With two sandwiches, I'm not going to be able to eat any chips, so oh well. Followed in a few hours by a couple of Archway Windmill cookies and another glass of wine.
