I ended up not cooking the broccoli last night, just did a big salad instead, so today I'm going to spatchcock a chicken and rub it with yogurt & Greek seasonings, and roast the broccoli in the oven & put some lemon juice on both once finished. I'll also do corn on the cob.
I have leftover cooked ground beef that I did not use in my taco salad. It's was 3 1/2 pounds. I might make another taco salad, and since my neck and shoulder hurts I think that will be easy plus I'll make a veggie on the side.
Made the first pot of soup "of the season." Made it with shredded chicken & lots of vegetables. Also made some "Honey Cornbread." (is a Krusteaze product) Later, will have a slice of zucchini bread (from our local Mennonite bakery & country market).
That sounds wonderful. I'm definitely making chicken veggie soup next week with thighs and a bunch of fresh vegetables.
Tonight: Roast pork, mashed potatoes, gravy, apple sauce, roasted brussels sprouts. I have stuff for wedge salad, but that seems like too much.
Thank God the last few days are over. We are finished with company, going out, serving coffee and cleaning up at church and we can sit down and relax this afternoon. We are simply have grilled chuck steak, grilled veggies and a simple but yummy green salad. Now, it is time for football!!!!
