It's going to be over 100 degrees again and truthfully, I'm so over summer. I'm doing Jersey Mike's subs with all the fixings. I'll have the ham and provolone, DS wants the Italian and DD wants tuna.

Like jrsygrl, I am sick of summer and it is only about the 1/2 way point, but then come winter and I will be bitching about the cold; I hate thinking of starting the oven, still I have this huge zucchini that I want to use. I am going to stuff it and bake it; we will have green salad as well.

I, too, am rather sick of summer. I actually adore winter in all it's cold and snowy glory. I spend this part of summer hiding in the AC.
Tonight's dinner is a sausage and squash soup. Last night my husband asked if we were ever going to have a squash free dinner again. I laughed and laughed and then told him no. Our squash is booming a little too much this year. .

I'm with you! I'd take cold and snowy any day over hot, humid and deadly. I am hiding in the AC as well. My DD decided she's moving on August 5th. Praying the humidity goes down because instead of hiring a mover, she has coerced her brother and sister into helping. It will be mostly boxes and her bed since she ordered new furniture to be delivered the day she moves in.

Shrimp in wine pan sauce over pasta, salad. Yesterday's plum/blueberry pie for me and peach pie for SO. I stood guard over those babies yesterday worried that they would not set but they turned out great. Made them in loaf pans lined with parchment paper.

If I can pull it off, a Baconized tomato onion pie with black olives and diced jalapeno peppers. Regardless a one pot meal.

The enchiladas were superb. Probably the best I have made.
I tried a recipe for Prime Rib in the deep fryer (big turkey fryer) a few years back. The whole prime rib went in the trash. Husband does NOT waste food, but even he couldn't stomach that. So he is understandably leery when I propose a new idea or method I "read about on the internet".

100 here yesterday too, and I had two huge spoons of extra crunchy peanut butter for dinner.

Cooling off to the upper 80's today so I think I'll walk over to the grocery store this morning for some chicken breasts for dinner.

We've been very lucky this year, it got over 100 in JUNE but then cooled off to the 60's for an entire week. Got over 100 a couple more times, then cooled off to the low 80's. The respite is nice and makes it bearable.
