Unexpectedly I found fresh bay shrimp yesterday at Winco so we had shrimp louie last night and will finish them tonight.

I have to edit what was dinner last night. I found a low calorie backed potato recipe - so instead of just steamed spinach - I steamed spinach, used a TBSP of chopped 97% fat free ham and Greek plain yogurt and TBSP of cheese - made twiced baked potato with that and only ate 1/2 the potato.

I hadn't heard of Shrimp Louie before, but looking it up, it sounds delicious - this would be something both my husband and I would love, and my store has some very good shrimp. I am picking some up next trip (as well as the vegetables needed) and will be making this! I can't wait to try the dressing either - that also sounds very good, like something my husband would LOVE and BONUS - a lot cheaper than pre-made in the bottles. Thanks!!!

I am so glad you mentioned twice baked potatoes - I make mine a little differently, but you know, I haven't had those in a LONG time - and they're a great dinner idea!!! I think I'll pick up a few potatoes, do that with them, freeze them, and have them ready for dinners! That really makes me happy! Thanks!!!!

I guess its a shrimp night for a lot of us. My dinner is more appetizer style but tough luck:

Shrimp Hush Puppies and Fried Cod Fish Nuggets with jalapeno dipping sauce
Potato Salad and
Apple Pie Egg Rolls for dessert

its hot out ,,,,but a good evening for a couple thick rib eyes on the grill..a good breeze coming off the lake
